OVEN ROASTED WHOLE DUCK

INGREDIENTS:

  • 1 whole duck Krakauerland
  • juice of 5 oranges (2 of them cut into pieces)
  • 100g soy sauce Kikkoman
  • 60g teriyaki sauce Kikkoman
  • 60g poultry spices La Drogheria
  • 3 red onions
  • 3 carrots
  • 2 pieces lemongrass
  • 40g fresh ginger
  • 2 garlic cloves
  • 2 bay leaves
  • 40g thyme Greca Botanica
  • 20g Murray River salt

INSTRUCTIONS:

Cut the vegetables into irregular pieces and place them in a pot together with the soy sauce, teriyaki, bay leaves, and thyme. Bring to a boil for about 3 minutes. Next, season the duck with the salt and spice mix, and place it in a baking tray. Then pour over the mixture from the pot along with the orange juice. Cover and roast in a preheated oven at 180°C for 30 minutes. After 30 minutes, uncover and brush the duck with its cooking juices. Continue roasting (uncovered) for another 15 minutes at 220°C, until it turns a nice golden colour.
