DUCK WITH BERRIES
INGREDIENTS:
1 duck breast fillet (frozen)
100g frozen berries Berrymark
20g berry jam with lemon
20g lemon juice
30g sugar
20g BBQ chicken spice seasoning
INSTRUCTIONS:
Thaw the duck breast and marinate it with the BBQ chicken seasoning. Then score the skin so it cooks faster and more evenly, and place the fillet in a pan skin side down. Cook it over low heat without any oil. Once the edges begin to change color and turn brown, flip it over and continue cooking in a preheated oven at 190°C with fan for about 7 minutes. Next, add the berries and sugar to a small pot and cook them over low heat for about 10 minutes, until they turn into a thick sauce. Remove from the heat, add the lemon juice, and stir. To serve, spread some of the jam on the base of the plate, place the duck fillet on top, and add the berry sauce on the side.
